Hash Brown and Sausage Skillet

3 Ounces Smoked Turkey Sausage – coarsely chopped
1 Cup Pre-Chopped Onion
2 Cups Frozen Hash Browns with Peppers and Onions
½ Cup Chopped Red Bell Pepper
½ Cup Frozen Corn - thawed
1/8 Teaspoon Salt

Directions

  1. Heat a large nonstick skillet over medium-high heat.  Coat pan with cooking spray.  Add sausage; sauté 2 minutes.  Transfer sausage to a plate.
  2. Add onion to skillet; cook 5 minutes or until tender, stirring often.  Reduce heat to medium; add reserved sausage, potatoes, and remaining ingredients; stir gently.  Cook, uncovered, 12 minutes or until potatoes are lightly browned.
  3. Remove from heat; cover and let stand 5 minutes

Makes 3 Servings (1 Cup each).  Per serving – 4 Weight Watcher Points, 209 Calories, 3.7g Fat, 8.7g Protein, 37.8g Carbohydrates, 4.3g Fiber, 15mg Cholesterol, 4.4mg Iron, 396mg Sodium, 35mg Calcium

Whole Wheat Waffles with Fresh Strawberries

2 Frozen Low-Fat Whole Wheat Waffles – toasted
1 Cup Sliced Strawberries
1 Tablespoon Reduced-Calorie Maple-Flavored Syrup
1 Teaspoon Powdered Sugar

Directions

  1. Top each waffle with ½ cup strawberries.  Drizzle each with ½ tablespoon syrup, and sprinkle with ½ teaspoon powdered sugar.  Serve immediately.

Makes 2 Servings.  Per serving – 2 Weight Watcher Points, 134 Calories, 3.3g Fat, 3.1g Protein, 24.9g Carbohydrates, 3.2g Fiber, 0g Cholesterol, 2.1mg Iron, 226mg Sodium, 63mg Calcium

Soy French Toast

Serve the French toast with maple syrup, applesauce, fresh or frozen fruit.

Serving: 8
Prep Time: 10 minutes
Cook Time: 10 minutes
Total Time: 20 minutes

Ingredients

2 cups soy milk
2 tablespoons soy flour
Margarine
8 thick slices of bread

Directions:

  1. In a large bowl, whisk together the soy milk and soy flour.
  2. In a nonstick skillet, melt a little margarine over low heat.
  3. Dip a slice of bread in the soymilk mixture; do this quickly to keep the bread from getting soggy. Then place the bread in the skillet and cook it until browned. Flip the bread and cook until the other side is browned. Remove the bread from the skillet and repeat with the remaining slices.
  4. Serve the French toast with maple syrup, applesauce, fresh or frozen fruit.

Soy Pancakes

Ingredients

1 cup soy flour
2-3/4 cup all-purpose flour
3 TB baking powder
3 TB sugar
1-1/2 tsp salt
3 egg
3 cups soy milk
6 TB salad oil

Directions:

  1. Mix all ingredients together until moistened. (Add extra milk for thinner pancakes.)
  2. Spray griddle with a non-stick cooking spray.
  3. Preheat to 350 degrees.
  4. Pour 1/2 cup of batter on griddle for each pancake.
  5. Cook and flip until brown on each side and firm centers.

Oatmeal/Banana Soy Pancakes

Ingredients

1/2 cup rolled oats
3/4 cup unbleached flour
1 tablespoon baking powder
1 1/2 cups soy milk
2 Bananas, thinly sliced

Directions:

  1. In a large bowl, combine the rolled oats, unbleached flour, and baking powder. Add the soymilk, and blend with a few swift strokes. Fold in the banana slices.
  2. Pour 1/4 cup of the batter onto a hot nonstick griddle or pan. Cook for about 2 minutes or until bubbles appear on the surface. Flip the pancake and cook for another minute or until heated through.
  3. Serve the pancakes with maple syrup, fruit spread, or applesauce.
